Pumpkin Protein Muffins version 3.5


Ingredients


  • 1/2 cup almond butter
  • 1/2 cup coconut butter
  • 1/4 cup local honey
  • 1/2 cup water
  • 1 pack sugar free Jello pudding mix
  • 1 can 100% pure pumpkin (15oz)
  • 1 cup dry old fashioned dry oats
  • 6 scoops Optimum Pro Complex
  • 4 scoops whey protein
  • 4 tsp pumpkin pie spice
  • 2 tsp cinnamon
  • 2 tsp vanilla
  • 1 tsp Optimum Nutrition Liquid Stevia Extract
  • 1/2 tsp baking soda


Changes

In order to improve texture, I substituted a pack of sugar free Jello pudding and included a 1/2 tsp baking soda.  The nutritional information was no re-calculated, but should remain pretty much the same.
