Pumpkin Protein Bars version 2.0



Makes 16 bars

Ingredients

  • 1/2 cup almond butter
  • 1/2 cup coconut butter
  • 1/2 cup local honey
  • 1/2 cup water
  • 1/2 cup unsweetened apple sauce
  • 1 can 100% pure pumpkin (15oz)
  • 1 cup dry old fashioned dry oats
  • 6 scoops Optimum Pro Complex
  • 4 scoops whey protein
  • 4 tsp pumpkin pie spice
  • 2 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp Optimum Nutrition Liquid Stevia Extract


Directions

Preheat oven to 350 degrees.  In a medium-large pot, add first 7 ingredients.  Cook over medium heat, stirring until well mixed.  Remove from heat and slowly fold in last 6 ingredients.

Pour mixture into a greased 8x8 baking pan.  Bake for 20 minutes (be sure not to over bake, as this will dry the bars out).  Cut into 16 bars and store in the refrigerator in an air tight container.

Nutritional Information (half of the fiber content is omitted to make my own calculations easier)

Total:  3856 calories  154g fat  292.5g carbs  325g protein
Per bar:  241 calories  9.5g fat  18.5g carbs  20.5g protein

I actually eat two bars at a time, as meal replacements while at work.
